Things I’m loving this week
February is over! Rejoice….We are one month closer to spring!
Vegetarian taco soup. I made this soup last week with the intention of having a ready-to-eat meal all week. Except Dan tried it and ate three bowls. Yeah, even the meat-eater/might hunter loved this soup. A few notes on the recipe: I added a can of tomato paste because I felt like it needed thickened. I served with a dollop of sour cream, but left out the tortilla topping. Also, I cooked it on the stove because it seemed silly to put it in a crockpot for hours on end.
“The Kids are Alright.” I stumbled upon this ABC sitcom by accident. It’s on just before “This is Us” on Tuesdays (on a different network) and found myself drawn in and laughing out loud. The mother cracks me up and the idea of parenting eight boys both horrifies and fascinates me.
“We Were the Lucky Ones” by Georgia Hunter. When one of my book clubs (yeah, I’m in more than one), picked this book and I saw it was about the holocaust I was not very enthusiastic about it because I’ve read so many books on/in/set around that horrific time in history that I was just didn’t know if I could stomach another. But, I’m glad I did. This was a really great book based on the real story of the author’s grandfather.
Things I’m not loving this week
Eh….just not feeling the need to wallow in negativity right now.
